Sorry to say, but this site has been so depressing for a few days. I thought I'd ask an average, everyday question....to make us all feel a little more normal today.
I made Eggplant Lasagna, and my BIL and SIL are coming for dinner. They leave for Cali tomorrow to see their beautiful grand daughter.

Hotdogs with mustard pickle and what the heck cheese!!! I keep telling myself not to worry i can lose weight quickly????? ive been saying that for ten years! LOL
I'm right there with you. I started working from home 3 years ago, and working 60+ hours a week on my butt in front of a computer for the most part started showing very quickly. I'm bigger now than I've ever been, and I hate it. I try to get out and walk when I can, try to get Mom out to ride along with me on her scooter (only successful with that once), and I keep telling myself I will start making use of the exercise videos available on my Roku....but....
This is just another one of those vicious cycles. Can't exercise/walk everyday cuz it's cold, rainy or snowing. Still have to feed everyone so comfort food in the winter it is. Get fat and lazy... summer arrives, too fat and lazy and blah that I look like a beast with blonde hair, so now I don't even want to go walking. Even if I did go, mom walks s o o o o o o o s l o w I barely need to breathe. LOL, it's just easier some days to lay on the couch with an arm flopped off the side... swinging back - and - forth waiting for the clothes to get dry. Oh joy...
I am forced to cook healthy meals because my hubby had a stroke last September. Of course, I can do it on my days off since I don't get home until after 9pm and taking care of mom in the process, does not give me time before I go to work.
This week I am off 3 days, so today I am finally making the chicken I posted about marinaded in lime and chipolte, home made pico de gallo salsa, a small veggie tray from the grocery store. I am making a large batch so we can make tacos/burritos tomorrow. I have lots of decluttering to work on so don't want to spend hours cooking everyday.
I look like a pear with a spare tire in the middle. Because of my belly, I lose my pens at work, LOL!!.. when I bend over, my tummy pushes the pens out of the pocket on my apron, Hahaha!!
Old friend coming from far away for the weekend so I'm busy cleaning, scraping up dog hair, washing drapes, shampooing rugs, the whole nine yards but I'm tired so supper for all of us and plop in front of the tv for a while.
I have a hereditary condition (thanks a lot, Dad) that causes me to retain water and have edema - BIG TIME. My legs are the worst. I take medication for it, which sends me scurriying to the bathroom 5 times an hour for about 4 hours, but if I take it as prescribed, I start experiencing side effects, so I take it when the swelling gets *really* bad, like it did today. I felt like the Goodyear Blimp floating around the house, bumping into things and feeling squeezed into my clothes.

1 jicama, peeled and cut into bite-size chunks
1 cucumber, peeled and cut into bite-size chunks
juice of 1 lime (or 2 if they are small)
coarsely ground salt, to taste.
That's it -- just place is a bowl and mix.
When I got home I found a very similar recipe in a Mexican cookbook, but it used lemon instead of lime juice and included orange segments. I'll try that sometime, too.
With the simple salad we had stir-fry chicken in cilantro sauce, over linguine. Good stuff.

There are probably only a few more days to the asparagus season here (Zero asparagus at farmers' market Sunday -- stores have it from Michigan) and I'd like to try that.
(We are planting asparagus this fall.)
Strips of jicama (hee-cama) are good on a crudites plate for scooping up dips. I like it in stir-fries, too -- it has a texture like water chestnuts but a fresher flavor.
And Captain, I wouldn't consider a salad of jicama and cucumber to be a fruit salad. :) Like your song lyrics, though.
I'm eating pretty poorly for past week, lots of take out and delivery of pizza and asian dishes... lots of fried, oily, heavy foods. By now I'm so sick of eating like that and I went to grocery finally because that was the real problem, I was out of most things at the house so just ordered in a few nights in a row. So back to lots of veggies. I'm trying to get nutritional consult for my father, either through VA or through his new PCP because I think it would help him to learn what foods are better for him... and he doesn't listen to me, he needs to hear from another "professional" source.
I am putting Turmeric on just about everything I eat these days. It has such a mild flavor and supposed to be so beneficial for you. It does stain things a yellow-orange color so have to be a little bit careful with it. But... yeah, it goes on everything now. :-)
