Yeah, you'd probably screw it up, Sodonewithsal1. We generally live up to our own expectations. :D

We all have to eat, but we don't all have to cook. We all don't have to even be enthusiastic about eating, as long as we remember to do it. BUT anyone who WANTS to cook can master at least some of the techniques and enjoy making many (if not all) kinds of recipes. If you want to make a boiled raisin cake, you sure could. If you'd rather find nice treats at local bakeries and restaurants, that is perfectly acceptable, too. Embrace what you really love! I'm glad you have weekends off from the kitchen.

What is your favorite Chinese dish?

Oooh, Chinese food. I love shrimp mein fun, GOOD egg drop soup (not that crappy stuff made from a mix that some restaurants serve), coconut shrimp, salt/pepper shrimp, beef/broccoli, peanut chicken, good spring rolls and crab rangoon. I could eat myself sick on that stuff.

Tonight is a poor substitute for good Chinese food....Subway. But it works. We are prepping for major work to be done in the house and also for a trip....I'm meeting myself coming and going.

Yup, a trip, Jeanette. I have to admit, I'm dreading this one, because it's not really a vacation for me, per se - in order to afford the trip, I will have to work through most of it, either at night or during the day. We are visiting my mom & dad's hometowns in the U.P. of Michigan (yes, Mom and Dad are dyed-in-the-wool Yoopers) - with a dual purpose: since Dad passed last year and we returned his ashes to an area he loved, we have decided to make an annual trip to that spot. When Mom passes, her ashes will be placed with Dad's. We also lost my Dad's only brother last year, and he was an extremely special person in his community - he took in and repaired used toys, dolls and bikes all year long, and then held a huge Christmas party for all the local children and their families. Everyone got a hot Christmas dinner, the kids all got a bag of candy and a big navel orange, plus a toy and a bike. The girls got dolls, the boys got Tonka trucks and all of them got bikes. The area was (and still is) extremely economically depressed, and for over 40 years, he gave the local kids a Christmas they might not have otherwise had. He also ran a local gas station and the local kids would help him out there, pumping gas and fixing tires, etc. He also sang at the local Catholic church and taught music to many of the kids. Anyway...he passed in November, just 10 months after my Dad...and his hometown is dedicating the local park in his name while we're on our trip, so that's the other reason we're going. The trip is a ways off yet, timewise, but I hate leaving things to the last minute.

Capt the chicken prices round here are double yours even in Walmart. I'm glad my husband is not on this forum (I won't let him) but your comment would really set him off after the govt, gun contol, incompetent MDs local officials overarmed police depts, the school superintendant and the school board to mention a few. And by the way his favorite TV chanell is Aljazera.?sp after CNN and anything about aliens or ancient cultures. I stick to HGTV so I can do without electicians and stonemasons. I'm the one with dirt under my fingernails in this house.
That boiled raisin cake is not difficult it is only the raisins that are boiled. it really plumps them up. Add a bit of brandy or rum and yum

Son is off with sweetie, Daughter is on a date (riding a Harley), and I'm left alone. Kept dinner simple ... grilled cheese (aged cheddar and asiago on sour dough bread) and roasted asparagus. I'm glad I usually have people to cook for.

Last night I figured out menus for the rest of June, factoring in as best I could who is going to be where, when. I don't always stick to the plans exactly but it is so convenient to glance on the fridge and know what to take out of the freezer for tomorrow or what I have to get at the store for the next few days.

Sigh. Too bad I am not as organized in my financial life as I am about food.

im not a conspiracy nut , and in fact am rather optomistic about current global affairs . love the information age , etc .
im with your husband on aljazeera america tho . i can detect spin from a mile away and aljazeera just presents the news . rumor has it that GWB wanted to bomb AJ during the gulf wars to shut them up . thats the hallmark of every insideous dictator -- stifle all dissent .
an example of AJ ' s unbiased reporting : theyre covering the renewal of the hemp industry almost on a daily basis . quatar sells oil , why give air time to a market that will compete with oil ? -- because theyre an unbiased news source as they claim .

Whew! Spicy dinner! Boarder/Daughter Barb and I took a Mexican cooking class this week. Today we went to El Burrito Mercado to pick up ingredients like chorizo and tomatillos. We had to have something from their lunch counter, of course, so it worked out OK that dinner was a little late tonight.

I made a green sauce from the tomatillos. Wow -- fresh is so awesome, kinda spoiles one for buying bottled. The meal was chorizo skillet. Each recipe called for 3 jalapenos but I'd mistakenly bought only 3 total. That was a very fortunate mistake. I don't know if we would have survived more peppers in the dinner.

Our instructor had said this is very simple cooking, and the dishes his mother makes at home in a small town in Mexico. And it really was pretty simple, if you happen to have Queso Oaxaca and chorizo on hand. But a trip once in a while to an ethnic market is a nice little adventure.

Awesome dinner!

Tonight is salads or cold fried chicken that I picked up this morning on my first trip to the new Meijer supercenter in the neighboring town. SO glad to see that store come to town. We were in what people call a "food desert" - we had ONE grocery store to serve about 5 small towns - and it's WalMart. No one was happy. Meijer's produce section is HEAVEN.

Prepping food today for our trip so it can be portioned and frozen for easy storage and use on the trip. Swedish meatballs, shepherds pie, goulash, hamburgers, grilled chicken breasts, meatloaf, roast beef, bacon, sausage, muffins, pancakes and cookies are all being pre-made today.

Making rapid progress on the food prep...feeling very accomplished! Mom down for a nap, yay! Quiet time to myself for a bit. Hamburger is cooked/crumbled for goulash & shepherd's pie, hard-boiled eggs are cooked and cooling in ice water, meatballs are cooked, chicken breast chunks are cooked, breakfast sausages are cooked and in the freezer already. Now to start the shepherd's pie assembly, goulash assembly, tuna casserole, muffins, pancakes, and to cook the rest of the meats. Also need to make a meatloaf. Some of this will be left here in the freezer for quick and easy meals when we return.

I am SUPERWOMAN. (grin)
