Find Care & Housing
Has technology, particularly the internet, changed the way you cook or plan meals? I have many shelves of cookbooks and I love them and I don't plan on giving any up any time soon, but I sure love the internet for searching!

Last night I had cooked salmon and cooked potatoes to work with. I planned on a simple hash, by adding bell peppers and onions. I typed "salmon hash" into the search engine and the first recipe was like my plans but also included an apple and bacon. So that is what I did. Sure brightened that simple dish up!

Tonight was grilled porterhouse, mushrooms, baked potato, and roasted Brussels sprouts with bacon. I made a fleece lap blanket for my mother today and by the time I finished it was too late to bake the potatoes. But I LIKE baked potatoes! Technology to the rescue. I microwaved them a few minutes first and them finished them off in the oven.

I look through the recipes book. Then I google the recipe in YouTube to see how it's done. It's a great teaching too- YouTube videos.

I cooked the goulash for lunch. First of all, taking down a frozen ground beef at 630am and defrosting via the fridge does not defrost fast enough by lunchtime, 11am. Fave niece gifted me a microwave - quite a small one. So, I couldn't defrost the beef in the micro. So, dumped in the skillet with the end parts sticking outside the pan. Struggled with the darn meat because it was burning on the part touching the pan. In between checking dad since he kept calling for little things. Finally took out an end chunk so that I can put the majority into the micro. Only when it was defrosting in the micro, I remembered, "OMG! I just put raw meat in the micro. E-coli!!!" So, once it was done, I left the micro door open - so that I can wash the insides before oldest sis comes out to use it.

Sigh.... The goulash was tooooo flavorful for me. I ended up only eating the meat, macaroni and mushrooms - trying to drain it of the sauce - with every bite. When oldest sis came out to eat, I warned her that it was too flavorful. She decided to eat yesterday's leftovers. I added maybe another 2 to 3 cups of water. Tasted it. Now, that is so much better.

Sis only comment as I was putting water in the pot, "I usually cook ground beef with coconut milk or cream of mushroom soup." I guess she's not going to eat the goulash for dinner - but yesterday's leftovers. Well.... done that, tried it, and have no plans to make it again...unless it's with coconut milk.. and to defrost the ground beef by putting it in the fridge the night before.

Thursday, I will be off from work, and giving oldest sis another day off of babysitting. I'm going to look in my recipe book for maybe with real meat like pork chops, or something... Figure it out so that I can buy the meat tomorrow.

I have a huge book passed down by mum "mary Berry" she is english and everything i need is there. But i still like to look at different foods someone here was doing "mexican cookery classes" i would just love to do that but we have no mexicans here! I watch all the cookery on sky sometimes quite late but end up eating afterwards. I have to look now at boring wheat and dairy free recipes which are quite a challenge and expensive to do. Gosh its 4am and im not even tired i must be addicted to those pills just hope i sleep.

By the time I was done cooking, I had lots of dishes to wash. As I was going back and forth transferring the dishes to the sink, oldest sis calmly got up, took the broom and swept the "mess" I made while trying to cook. Well, I did clean the table because I still had some raw pieces of ground beef all over it. Ahem....it was when I was struggling with the frozen meat. I had to giggle as she quietly swept the floor. This is sis - who Rarely Cleans. That gives you an idea of what a mess I made of the kitchen.

Captain, where were you when I tried to bake brownies? I followed the recipe - down to the minutes. Except when the time was up, I thought it was still uncooked because it was soooo soft. I decided to bake it longer to 'firm it up' some more. Needless to say, when I took it out of the oven, it was so hard, I couldn't even cut it with a real knife (not the butter knife but the real mccoy knife.)

I like salmon. I found a recipe for Orange-glazed salmon - 10 minutes to make (yeah, right...) I figured I will take out the dark sesame oil since I don't like the taste. Maybe substitute with virgin oil - or no oil at all. I brought up to oldest sis on how would she like for me to cook salmon on Thursday. She hesitated sooo long. I guess, that's out.

I guess I will try the Honey-mustard pork with Wilted spinach.

NH is an emergency order and edna is top of the list -- but sharon wont get 2 bank statements to them . bank statements , so easy to get . i left edna with many " loving " family members tonite and came home . i wont miss my va appt tomorrow . edna will prob'ly be left alone tonight but ive notified aps . a grandson came up from 65 miles away and the family is going karoake-ing . i think he came up with ednas bank card . these people are revolting but theyre not getting by with it . i will take care of my health first this time, then my relationship with grandkids i havent seen in 2 years . i feel that sometimes when an elder is brought to shame by their kids they in fact deserve it for not slapping the kid down and teaching priorities years ago . i wont take this fall . im going to the va then to see my g - kids ..
the d*mmed old man upstairs is being humiliated by his 60 yr old toddler too - while he sits in his chair and grins like a possum eatin s*it . live in the hell you created , burley ..
whatever .. ive been with edna for 6 days , 24 hrs a day and giving her great care . poa has been there a total of 45 minutes . im hoping to force a welfare check , emergency placement , and poa revocation . then edna and i will cruise the countryside like we own it .. ive learned to own things . if im taken advantage of its cause i was stupid and let it happen ..

I agree with you, captain. Shame on all of them. I sure hope they do get in trouble. If they don't, then I hope Karma visits them - and soon.

I was suppose to have lunch at Chili's but they were still closed at 10:45am. Unless I didn't know how to open their wooden door... So, I went to another restaurant for an early lunch. Since it still wasn't 11:00am, they were still serving breakfast. So I ordered a $6.00 spinach/avocado egg omelet with hash browns. Since they didn't have meat in it, I added on the side 2 small pieces of Portuguese sausage. The omelet was.. interesting. Okay, it had No Taste. The hash brown also had no taste. I'm not crazy about tomato catsup. But this time, I liberally applied it onto my plate. Practically drowned the hash browns with it.

Dinner was take-out from Wendys. Since fave sis told me to charge it to her bill, I ordered 2 salads - strawberry salad (with apple dressing) and the spicy chicken salad. I never tried the strawberry salad. I like it. But I wouldn't pay $7.00 for it out of my own money.

When I got home, I told sis that I bought the chop steaks. I told her that I had a hard time with the ground beef because it was still frozen. What should I do with the chops? She said to take it down from the freezer and put in the fridge tonight at 10pm. Then tomorrow morning, put away the extra meat that I don't plan to cook back up in the freezer. Okay... I'm ready to cook real meat tomorrow - using dijon mustard, italian salad dressing as sauce. sigh... I hope it's not too flavorful like the goulash.

Oh, talking about the goulash. Sis ate it today. She liked it and put aside some for herself in the freezer. I will never make that again. Later, I will check the web for some recipes that uses macaroni. I still have 4/5 of it in the box.

i was going to drive the small truck and take edna to chicago but poa and aps both bucked at the idea . neither refused me outright -- cause neither have the authority. edna is competent and able to do what she wants --- but poa is with her grandkids right now , screw old cappy .
thats going to be hard to do at 70 mph .

All right, so what is everyone having for dinner tonight and are you making enough for drop by visitors? I have been reading some of the posts from the beginning and most of the dishes sound so mouth watering good that I have wanted to invite myself to your place for dinner. No sense in trying to figure out what is for dinner here. Nope, I will join one of you for dinner and some good conversation to boot. So I am having whatever you are having tonight. Now that I have that figured out I can get some other things done before 'dinner rolls' around.

I've been eating so much chicken lately I'm about to start clucking. So tonight I'm making bacalao guisado con arroz blanco y aguacate. With a small salad afterwards. For dessert, pistacchio & almond ice cream while I overdose on World Cup games.

Many caregivers in this forum can't even remember the last time they went out to dinner, or even have the time to enjoy the meals they have at home. Others have become accustomed to running on fumes that sitting down for a home-cooked meal has become a thing of the past. So they grab a bite here and there.

Thanks for asking. It was a reality check.

kazzaa - sounds good and I too questioned what maca was so I looked it up. here is a link if interested:
vegkitchen/nutrition/7-top-health-benefits-of-maca/
it is in the radish family and it gives advice on how to start using it, such as 1/2 a tsp to start.
Thanks for the recipe as all the other ingredients my mother eats anyway so that would be great for her as she needs the liquid...always battling dehydration.

Book - Did you get your answer to your brownie question? Brownies are one of those desserts that if you bake it too long will dry out. Here is one suggestion for the next time you make them. Take them out of the oven even though they look like they are not done and put them on top of the oven. Place a cookie sheet (or piece of foil) over the pan. The brownies are still baking for a few minutes just not in the oven.
