Sorry to say, but this site has been so depressing for a few days. I thought I'd ask an average, everyday question....to make us all feel a little more normal today.
I made Eggplant Lasagna, and my BIL and SIL are coming for dinner. They leave for Cali tomorrow to see their beautiful grand daughter.
Sorry, sometimes we just need some REGULAR conversation.......or at least THIS caregiver does.
Fave sis and I went shopping. I got the wok, a 3-in-one griddle/grill (I want to use the grill to try to cook some veggies like asparagus), and a spice rack. I also got some stick-its to mark the pages on the cookbooks that I would like to try.
Goal: I want to cook a delicious simple meal for fave sis and her hubby. They have done soooo much for me all these years. (It has absolutely nothing to do with sis putting me in her life insurance.... Really...) And because they know that I don't know how to cook, they always made sure there was food in their house when I visited. Even gave me the keys to their house if I ever felt the need to get away from home. I can't wait. I already want to include the chops on that menu. I now want to work on veggies. I don't recall them ever eating asparagus. I'd like to give it a try. I ate it One time at a friend's house. The Real asparagus - not the one from the can or pickled in the jar - store bought. It was delicious! She cooked it on top of the George Foreman grill. I just don't know what she did to season it.
I asked her feedback about re-arranging the kitchen. She got excited and gave me details, which I round-aboutway told her that if we did that, I would be cooking with the pot chest level. Maybe something lower so that I can reach the pot without tiptoeing? And what about a moving table island? She got excited. YES!!! Let's hope this momentum carries her through!!!!
I like your idea of including sis on rearranging the kitchen.

Metallica did a great version of Thin Lizzys "whiskey in the jar" have you heard it? they were at Glastonbury this year i must listen to it. I think youd like Thin Lizzy there were a great band!
Dip thin slices of very green tomatoes in a dry mix of 1/4 cup of flour; 1/4 cup of
corn meal; 1/2 teaspoon salt; dash of cayenne pepper...Place in frying pan with 2T. medium hot cooking oil (or bacon grease) (or canola) (or your choice) and turn on low heat for 15 minutes...turning every 6-7 minutes. Place on rack to drain..serve hot and crispy..this is an Ozark recipe and it is usually done with bacon grease. However, due to too much trouble, I just slice the very green tomatoes thin, cover them on both sides with cornmeal, and pan fry each slice using coconut or canola oil. Easier, and still good.....marymember
Green tomatoes? I need to check it out at the grocery store to see how that looks like. Marymember, I have copied and pasted your recipe. Something I would like to try one day. Looks simple enough. Oh, I need to buy a rack. I don't have one of those.
It's midnight and I'm about to make my first meal of the day. I'm not feeling well (spent 3 hours at the walk-in clinic this afternoon to find out I have a virus but not strep -- worth knowing before I visit the NH). I've tried to eat enough carbs periodically throughout the day to keep my blood sugar in safe range. I had a hard time deciding if any of those snacks needed insulin. I didn't think so. Man, I am SO tired of trying to think like a pancreas, as my Certified Diabetic Educator calls it.
My dinner will be potatoes and eggs and cheese. I'm finally hungry. And I will take insulin. Hope I get it right. Sigh.
If your old cat isn't used to dogs I certainly wouldn't get a puppy as it would be too hard on him. When you're ready look for a reputable local rescue and adopt an older dog who is good with cats. At best they'll become buddies. At worst they'll ignore each other. I'm older and creakier now so I only adopt seniors as I don't want to leave anyone behind.
Buy,beg or steal a litter box and some clumping litter and your kitty will be much happier and safer. Clean it each day and it won't smell. much cheaper than a visit to the Vet. An unused washing up bowl works if you have one lying around.
Hes so sweet! he went out at 6am this morning when i got up there was a little dead mouse at the door!!! They say its a "gift" for looking after them! Hes recovering thankgod for teatree wipes. His wound is healing and drying up and hes back to himself phew! lucky this happened when i was here and not next week as im not here and wouldnt trust my sister to have coped! Hes alseep on my lap now!!
So roast beef,roast potatoes,mashed turnip,beef gravy and Yorkshire Puddings(these are delicious with roast beef) made from a batter then baked in the oven! Mum will have icecream after and ill have chilli dark chocolate which is a bit strange but ill eat anything with this diet! very spicey!!
Yorkshire pudding, yessss! I grew up in the UK and my grandmas always made it. As you have to get the oil smoking hot before adding the batter I've always been scared to try it. I buy the pre-made frozen ones and do them in the toaster oven ... my bad.
