Sorry to say, but this site has been so depressing for a few days. I thought I'd ask an average, everyday question....to make us all feel a little more normal today.
I made Eggplant Lasagna, and my BIL and SIL are coming for dinner. They leave for Cali tomorrow to see their beautiful grand daughter.
Sorry, sometimes we just need some REGULAR conversation.......or at least THIS caregiver does.
I was just thinking ... I got a whole new loaf of bread. What can I do to it - to make dinner? I smiled when I read LadeeM's dinner. Aha! I still have an unopened can of chunky peanut butter. Nah, I don't feel like eating that. Most likely I'll scramble eggs and salami sandwich, with a dash of tabasco on the meat.
im gonna boil some chicken this evening . fell on my face after 4 hours of woodcutting today but wth ? a freakin marathon is only 4 hours long . my " want to " is a megalomaniac ..
Now that my sister and her friend left I have to resume cooking only for two. Dad was great on eating leftovers of the recipes I tried and wouldn't make again. He says the food at the assisted living place is good but he isn't a fussy eater to begin with.
jeanne , the shrimp salad does sound good . i have a couple of monstrous cans of sardines in tomato sauce . i should rip the label off of em before i find out what kind of polluted , punjab , lagoon they came from i s' pose . theyre from the dollar general store . its a good bet they didnt come from under the icelandic shelf or the coast of norway ..
not really . ikes pistons are barking like the hounds of h*ll or something .. ive ridden my dad on ike , my sons , and now their kids . ike represents a longer stretch of history than the republic of taiwan ..
looking squarely at fukishima japan here ..
dont build nuke reactors on the beach front --
What we are having is hamburgers. Since we weren't sure how I'd be the day after cataract removal, and since Pat is home today, we scheduled him to make his famous burgers. I know it involves beer and fresh mushrooms, lettuce, tomatoe, and Swiss cheese but I'm happy to leave the details with him. :)
(I'm doing fine. I could have pulled a dinner together, but I don't mind a little break.)
helpontheway, do you leave the skins on your potatoes?
Dinner tonight is left over tri tip that will be cut up into cubes. I am making oven baked brown rice, when done I will add the tri tip and some sauted veggies. Since hubby doesn't like gravy...I will make gravy just for me. A salad with sunflower seeds, tomatoes, green leaf, onions and cucumber and feta cheese.
Have good evening, almost 2 pm here so got to get going on dinner.
tonight I am doing russett ones so I will peel. When I do the red ones I leave the skin on. Funny I have never thought about leaving the skins on for mashed even though I do when I bake, fry or scallop. Has anyone ever tried the russett mashed with skins?
im going to eat my boiled chicken tonight . having one or two jaw teeth removed tomorrow . at my age i still have plenty . glad they behaved till the hepc tx was over .
ednas poa is being hateful again . i was ok when i was caring for her mom for 11 months but get bent and leave it to her for a few days and im a sorry dog . its ok . ive learned when someone is screwing with you to carry on without so much as a mean look . it just burns em to the ground .
it takes practice but its a blast after you get good at it . every one in three different agencies knows whos been doing the work . i have nothing to prove to her or anyone ..
ill cook edna some apples tonight and see her before and after work as always ..
But the skins interfere with mashing if you are doing it with a stand mixer or an immersion blender. I'm thinking of hunting through the stuff stored in the basement to find a potato masher. That old-fashioned non-electric tool handled the peel just fine!
i eat apples in a peculiar way , speaking of lazy . i cut it in half and eat apple , skin , core , seeds and all . they are just too troublesome to peel and core to suit me ..
i think the skins are the best part of a baked potato ..
