Sorry to say, but this site has been so depressing for a few days. I thought I'd ask an average, everyday question....to make us all feel a little more normal today.
I made Eggplant Lasagna, and my BIL and SIL are coming for dinner. They leave for Cali tomorrow to see their beautiful grand daughter.
Sorry, sometimes we just need some REGULAR conversation.......or at least THIS caregiver does.

I just learned something new .......if you gently pinch the bottom of the banana it pops right open. To think I have been struggling with banana's all my life, errrrr. Especially since mom. It is the easiest and her favorite snack of mom's and healthy so she gets at least one a day, if not 2.
If you have never tried hasselback potatoes, give them a look on google. Hadn't heard of them last year, and now they are our preferred style.
What I've noticed about prices is that organic is often more than twice the price of regular. How does any household sustain that?
isn't turning the oven on to just roast sliced potatos rather wastefull of energy.
Usually my oven is crowded. I don't often roast or bake one thing.
I had a team come out last year to assess our energy use. I asked about a small refrigerator we have. The answer? "It may not be as efficient as your large refrigerator, but we do not recommend that you drink your beer warm."
had an apple pancake this am to see if breakfast really would give me energy . it didnt seem to .
im liking the rebuilt kitchen counter . little by little the kitchen is getting cleaned up better .
Tomorrow, I'm planning to cook shrimp, veggies and rice.
Nope warm beer, maybe over the pond, not for a yankee! Actually good is a warm beer and lemonade mix friend brought back from European vacation!
I'd fire up the oven in a heatwave for brownie's lol!!!
I have to say tho I just got a new oven, mine had been broken for years, so I had one of those turbo ovens (rapidwave), little countertop models, and have grown so accustom to how nicely it crisps up things, like fries n frozen battered stuff like fish or chkn, corndogs etc...(yes I do a lot of pre prepared stuff just because I have too, timewise) and does the meat so quick. I only use the oven for large stuff, cassaroles. or baking etc...
I love reading all the yummy stuff you guys make, I am living vicariously thru you all! lol!!
Veronica, you will be pleased to hear that the crisp shared the oven with the wild rice hot dish that was the main course. We both loved that, too. I said, "I wonder why I don't make wild rice more often? I really like it." And Barb reminded me that it is 1) expensive and 2) takes a long time to cook. Oh yeah, I knew there was a reason. :)
Tomorrow through Saturday I'll be on a bus tour -- NO COOKING!! I love cooking, but a break is always nice.

juju, you werent kidding about the animal fat in chicken wings . i put the leftovers in the fridge last night still in the pan . this am there was nearly 2 inches of gelled fat on top of the water . that would stop your heart mid - beat if theyd only been quick fried and a sauce added .
I am working at home today and didn't feel like sitting down to a real meal. I made chicken soup from scratch (the news about viruses must have influenced me.)
Later a coleslaw: cabbage, carrots, celery, mayo, organic apple cider vinegar, just a drizzle of maple syrup. (Can you tell I love maple syrup: the real deal,no artificial junk.) Supper was a bowl of steamed zucchini, red onion, grated cheese.
I love living alone! Eat whatever whenever!
the recipe im using is
2 qts apples in a dish with 3/4 cup of water , a little sugar and corn starch poured over them
topping ; 3/4 cup flour
3/4 cup oats
half cup brn sugar
half cup white sugar
1 stick butter
spices
very simple . bake on lowest rack so apples cook well before topping browns .
i hate living alone . i move from one project to the next so quickly that theres no cause to clean up the mess till about 3 projects are completed . i rebuilt kitchen sink cabinet , chopped / mounted trk tool box then built an air foil for the cab in front of the box . one person cant jump around like that and be neat about it too . all prep for firing up a stone chimney for a neighbor and being ready to can venison . its a brain spin here for just one person .
I started with a little olive oil, added a crushed clove of garlic, half of chopped onion, stick of celery chopped, and diced a red pepper. That was gently sauteed and then in went a can of rinsed and drained organic kidney beans and diced up a half of zuchini. No cans of tomato sauce around so the sauce was chopped tomato, some BBQ sauce, ketchup, and a teaspoon or so of some chilli sauce I found in an Oriental store.
I played with the taste and lastly added some cut up swiss chard: just a leaf to get some leafy green vitamins in there. I cooked it slowly for about 10 minutes and toasted the tacos. Filled the tacos and ate a side of yesterday's coleslaw.
It was very messy and I would not recommend this to an ALz person: but you could just feed them the beans in a bowl or blend it so they can swallow it?
Well I don't know about ill people but for the caregiver who is busy and wants some easy satisfying food that isn't as messy as cooking meat, I thought this was a good meal: especially with the coming of winter.
im making another apple crisp tonight . i dont have my new counter tiled yet so pie and bread dough are still on hold . the apple crisp is easy to toss together .
Last night I made a very simple, but complete dinner. Feels like a long time since I've actually cooked! Just some grilled salmon, salad, and a yummy rice blend of some sort.
I like my meat and fish cooked on the rarer side; my husband likes everything more medium. So I took the fish off the grill when it was done to my liking, then finished up his portion in the microwave WHEN HE WASN'T LOOKING, because he'd have a conniption if he saw, and would probably refuse to eat it. He ate the whole thing and said it was perfectly cooked. Wink! ;)
He had his first solid food today. Progress!
looloo that sounds like a great dinner! A little microwave boost makes sense to me!
the farm foreman , just like he offered , brought me about 75 pounds of venison yesterday . he didnt want anything for it but didnt turn down 40 bucks when i offered it . this way he knows ill pay him for knocking me down a big doe this season . things are looking up around here . with my rebuilt kitchen i am beginning to get the bunker cleaned up and drywall on the walls . you wouldnt think that cold air would penetrate 16 inch block walls but it does . my little bunker is really ahead of its time in economy and function . theres only essentials in here and it creates a feeling of freedom from clutter .
gonna can my deer meat so ill never have to worry about spoilage or freezer burn . if anyone has stocks in chicken livers , better dump em fast .
My son, Ian, had a pretty good day. He is eating solid food and his appetite is coming back. He managed to transfer from bed to chair, using a sliding board today. (It took 3 people to help him back.) Surgeon read his x-rays and isn't considering further surgery, at least at this time. He'll probably move to a rehab facility within a few days. He had a delusion/hallucination last night, but seems pretty normal cognitively.
ba8alou, I like to keep "instant" dinners, too. A big bag of frozen ravioli, a few frozen soups (homemade or purchased), and nice mixed veggies are in my freezer, too!
