I found this to be true in my own mother's case when she came to live with me. Grain affected her in the same way. At first I couldn't figure out if it was the bread or the sugar. She was not a diabetic, but it seemed the insulin spike must have thrown her off base. So I experimented and found that when we eliminated wheat AND sugar, except for a little here and there, her mood improved UNBELIEVABLY.
It was like there was a quota that I could allow her (once a day as in toast with her egg, or two cups of tea with one tsp. sugar, or a bit of pasta (or a chunk of nice, crusty bread with zoodles instead). If she had more, she became the mad woman of Chailott! There are many who will say that's ridiculous, but until you live it and see it, you will discount the difference. Go with your gut.
