Which type of professional should I seek to help me to understand the best use of my mother's assets to care for her in her home?

You need help from both an attorney and a CPA. Talk to the attorney first, one that specializes in Elder Law.

Also try to clearly determine what level of "in home care" your mom needs. And what moms current health concerns and diseases are likely to morph into.

An elder who can do most of their ADLs but lives at home is quite quite different than one who needs help with all thier ADLs and cannot stand on thier own. An elder who right now has diabetes, copd & mid stage Alz dementia is going to be quite quite different care needs than one who is old but basically healthy with early stage lewy body dementia. & please, please be realistic as to just what mom's abilities and care needs are.

In home care could cost as much or even more than having her in a facility. Remember to ask about your responsibility for taxes & employer liability & insurance for hiring those in home caregivers too.
